ingredients
Cake:
- 1 envelope of gelatin dissolved in 1/4 cup of water
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg (packaged)
- 1/8 teaspoon ginger
- 2 eggs, separated
- 2 teaspoons of cinnamon
- 2/3 cup whole milk
- 1 heaping cup of canned pumpkin (NOT pumpkin pie mix)
- 1 cup of granulated sugar
- 1/4 piece of butter or margarine
Cake crust:
We use ready-made graham cracker pie crusts, but you can make your own too – and it gets even better!
- 1 1/3 cups graham cracker crumbs
- 2 tablespoons of powdered sugar
- 1/3 cup melted butter or margarine
Whipped cream:
- 1/2 pint real whipped cream (this can be enough for two cakes)
- 1 tablespoon powdered sugar
Directions
Part 1:
- Separate the eggs from their whites. Keep egg whites in the refrigerator.
- Start a water bath on the stove.
- Put all cake ingredients except egg white and gelatin in the water bath.
- Heat the mixture until thick and stir regularly.
- As the mixture thickens, gradually dissolve the gelatin in hot water and stir vigorously.
- If the pumpkin mixture is thick (note: make sure the spoon is straight), stir the gelatin water into the mixture on the stove over low heat.
- Let cool down.
- Put the mixture in the refrigerator until it sets (we recommend letting it set overnight).
Part 2:
- Beat egg whites until light and fluffy.
- Once the mixture has set, beat the pumpkin batter in a separate bowl on low speed until creamy.
- Then fold the egg white into the pumpkin batter until everything is well mixed.
- Pour the mixture into the cake dish and top it with whipped cream.
- Sprinkle lightly with graham crackers.
